We have brought together the traditions of Italian cheese making and use of local, farm-fresh Jersey cow milk to produce artisan cheeses right in New Jersey.
Our small-batch facility sits on Hillcrest Orchard & Dairy in Branchville, NJ. We don't like to brag.. but it's pretty cool to watch the Jersey cows in the pastures out our windows while we are stretching the mozzarella curds made from their milk. The Jersey cows provide us with a great quality milk perfect for making fresh Mozzarella, Ricotta and plenty of other fresh & aged cheeses.
